It’s Monday- Easy Work Week Lunch
It may be another day at work but at least you will have something to look forward to halfway through.
As the weather warms up and the days get longer, here is a lunch to freshen up your palate.
This salad can be made the night before and kept in the fridge for the next day when you need a pick me up. With a little spice from the chicken and salsa, tanginess from the lime juice and goat cheese, crisp sweetness from the romaine and creaminess from the avocado, it a well rounded entree salad.
No need for precooking ingredients the weekend before either, this salad is made from entirely ready prepared products from the grocery.
All you will need:
1 Fresh organic romaine heart
1 oz Ripe Hass avocado
3 oz Organic, all natural southwest grilled chicken strips (Applegate Farms)
1 oz Goat Cheese
1 oz Fresh lime wedges or lime juice
2 oz fresh papaya mango salsa ( I got mine from Trade Joe’s)
Simply chop romaine to your desired size, toss with your lime juice and plate. Top with the papaya mango salsa, hass avocado, goat cheese and finish with the prepared chicken strips.
So easy and so satisfying! The only premeditation required to make this meal is to put the ingredients on your grocery list.
